AdminHistoryThis sub-committee was appointed by the main Markets and Fairs Committee in February 1924, but met infrequently, about once or twice a year. Its function was to consider the question of payments of the residual value of condemned foodstuffs and the working of the manure plant in Montague Street. The usual practice had been to send condemned foodstuffs for incineration at Montague Street, without any compensation being paid, but around 1910, this practice was changed, as foodstuffs were turned into manures. However, as the process to acquire unfit meat was lengthy, it was agreed that compensation would be paid to traders.
